Tribe Spotlight: Kinimi Kitchen

Kirbee Miller is the mastermind behind Kinimi Kitchen. She’s hosts a fun YouTube cooking show, and we the tribe was invited to see just how the magic happens. It was hands down the most fun I’ve ever had in the kitchen. Watch our segment, and make sure you whip up these recipes at home.

Baked Brie:

  • Ingredients:
    • Puff Pastry
    • Brie
    • Honey
    • Apricot Jam
    • Fresh Green Apples
    • Pita Chips
  • What to Do:
    • Allow Puff Pastry to thaw slightly
    • Pre Heat Oven to 425 degrees
    • Unfold the Puff Pastry on a pan
    • Place the Brie in the enter
    • Fold the opposite corners in so them meet
    • Flip over the disc and tuck the edges
    • Score the top of the dough with a sharp knife
    • Bake for about 15 – 20 minutes until light golden brown
    • Glaze with the Apricot Jam & Drizzle with Honey
    • Let it rest for 5-10 mins
    • Place on platter and serve with pita chips and sliced green apples

Tribe Salad:

  • Ingredients:
    • Black Beans ~ 15 oz  / 2 cups
    • 1 Red Onion
    • 1-2 Cucumbers – Cubed
    • 2-3 green onions – Chopped
    • 1 c Grape tomatoes – Quartered
    • 1 Bag  frozen Sweet Corn thawed
    • 2 Avocados – sliced
    • ¾ c Italian Dressing
    • Salt and Pepper
    • Cayenne Pepper
    • Minced Onion
    • Garlic Powder
    • Small bunch of Cilantro – Chopped
    • Lime Juice (1 fresh lime)
  • What to Do:
    • Drain Black beans and place in bowl
    • Drain corn and add to the bowl
    • Add chopped vegetables and cilantro to the bowl
    • Add seasoning
    • Drizzle with Italian dressing and toss
    • Top with more Cilantro for garnish

Chicken Gyro Salad:

  • Ingredients:
    • Salad
      • 3-4 Chicken Breast
      • Romaine Lettuce – Chopped
      • ½ Red Onion- Sliced
      • 1-2 Cucumbers – Cubed
      • 1 -11/2 c grape tomatoes – Quartered
      • 3/4c Feta Cheese
    • Dressing:
      • 2 cups plain Greek Yogurt
      • Lemon Juice (1 fresh lemon)
      • 2 springs Fresh Oregano – remove leaves and chop
      • ½ – 1 TBSP Minced Onion
      • ¼ granulated Garlic
      • Salt + Pepper
      • A liberal dashes of:
        • Slap Ya Momma Seasoning
        • Baida Complete Seasoning
    • What to Do:
      • Mix Greek Yogurt and spices and herbs thoroughly
      • Add the Lime juice mix, set in refrigerator until it is time to serve
      • Season chicken with Fresh Lime Juice,  Fresh chopped Oregano and  liberal dashes of:
        • Minced Onion
        • Garlic Powder
        • Slap Ya Mama Seasoning
        • Baida Complete Seasoning
        • Black pepper
      • Heat Olive Oil over medium heat
      • Cook chicken until medium brown and thoroughly cooked
      • Let it rest 2-3 minutes – Chop
      • While the chicken is cooking toss the lettuce, tomato, onion and Feta together in a large bowl
      • Drizzle with Olive Oil (lightly)  and season with salt, pepper and Baida Complete Seasoning
      • Top with Chicken and the Greek dressing
